[OSList] how to organize record of proceedings in a 3h1/2 OST format ?

We sometimes have lap-tops or IPads in the break out sessions and have someone (self-selected) type in  the key points during the conversation (as I think you already indicate in your mail) . Sometimes we use a simple template and a drop box - It has worked quite well.
